I had food at IU 79 was for an event and it was all they did a vegan menu and they were like say vegan food can be fun. I'm like it's

They're smarter than us when it comes to Well, I mean have a pack used to be like a notch. It was low and so it was classed as a certain area like a swamp swamp land. But it is on a floodplain I think. But it was cheap back then. And now they own half the half hour pockets. so expensive stuff. Quick question in regards to authentic great food. Is it possible if you go to just a random Greek restaurant in Melbourne? Is there any certain signs or any restaurants that aren't authentic versus authentic? Look, every place has something well, my suggestion is if there's a great waiter or someone great just say bring me something bring whatever you think if you said that to a great yeah, great, very proud people that won't disappoint you they'll just bring out the best of the best they'll have to offer that won't go. You know what I mean? Like if you just learning from the menu, they may
You might get a hit or miss at whatever restaurant you go to. But if you turn around to the waiter, you say bring me whatever you think. And just give him the menu. Greg's a proud though, they'll bring up what they do well, well the one bit of anxiety around it is I went to one place where the you know, traditional didn't have like the prices or anything like that on the on the thing and so there is the little bit of a white year enjoying the third and every moment. This is great, so tasty, but there really is the little voice in the back of the head bang. I can afford this.
If you gotta make an us yeah, you might get a little bit of a surprise. Yeah, but generally speaking, they're pretty good and even in making us luck. You know where to go when you see someone's got like a sparkle out with the dumper, young.

Like that from someone who's in the industry,
we want people to come out and you know, eat together and you know, share conversation and that's why we do this job. We don't want to cook and people eat at home internet sort of. It takes half our job away from us even though it's convenient and we understand it's the future. Yeah. I don't really lock a person. Yeah. Alex to see people having a laugh having a few drinks together. Yeah, definitely. It's better than just sitting at home in front of Netflix just eating like a I think it's a bit too American for me.

I understand that I completely get I think that's something you know, what's your favourite time of the week? If you were to pick a moment here, it's a liner when?
When is it when is it pumping here at the restaurant? When do you think it's your favourite vibe? Look, for us. It's a small intimate restaurant so it gets busy quite quickly. Whether it's
Monday or Tuesday, there's people in the restaurant.
But Friday, Saturday, obviously it's very, very busy. But even like a Lazy Sunday, people come in, we didn't have set hours. So you can come from 12 all the way through dinner service. So you can come at four and have an early dinner or late lunch. So I think Sunday's is probably my favourite. The vibes pretty good. Yeah. The finally tipping and stuff in Australia. Obviously, it's not as common in restaurants like this. what's what's your view on because I've noticed more and more you go to places and you're going through and you there's the tipping thing and like I'll put 10 bucks or whatever, from someone who's got a restaurant. What's your view on a bit old school in that sense? Oh, I remember when you sign the tip. It was a bit more discreet way you just give the person the bad sign. The name now it's all pain. So
gone so now I get awkward because I don't want to ask people would you like to leave a tip I just keep that function personally because it's weird for me
in this industry for my left that with your signature at the end, but look, if you enjoy the service, leave something for the hospitality staff you know, you know, it's it's a tough job so if you want it If you're happy to do it, leave something but you don't have to there's no rules that you get paid quite well. Generally speaking, if you do the right thing, most people get paid quite well in Australia without a world right and what have you. But look, if you want to live to even to $3 it all adds up for the stuff at the end. The change of government
what happened with is taking
the penalty rights, hospitality star for for Look, it's it's it's it's quite high.
It's tough because it's a very competitive market. So
in hospitality, we're giving
opportunity to people that are unskilled at the at the end of the dialogue, some people come in with zero language and they in the kitchen and they, you know, peeling potatoes or they're washing plates. And that's their entry to, to the, to the to the workforce basically. So
they get paid quite well considered considering other countries. If you look at other countries, they get paid really, really well. But look,
I think Australia's got a good system where it's a, it's a fair system. And by paying people the average person more than they can afford to go out. So it all helps you pay everyone less, and people try to squeeze people on the wages, and then they're not going to have enough money to go out was I think,
a better solution is to just maybe minus a bit of the tax for the for the hospitality staff. And I think that's a better solution than you know, either dropping the right or lifting there. Right, exactly. The big question.
